Quixotic Rare & Mythical: The Fire is a 24-year-old Kentucky Straight Bourbon that amazes with every sip. It is so incredibly well aged. Smooth and mellow. Powerful. These things can go hand-in-hand. You’ll see.
Nose
Yes, breathe in deeply, the palate indicates all of life’s sweetness. There’s that toffee and caramel fudge we love so much in our bourbon. Nougat. Brown sugar. And what about the vanilla we sometimes crave in life?
But it’s not all straightforwardness. After a few times inhaling nicely, you’ll find that this Phoenix hides the spiciness we long for, after having been too vanilla for some time: nutmeg, cinnamon and sure, some ground pepper.
Palate
A warm embrace. Some roasted oak is the only thing hinting towards the obvious demise of the mythical Phoenix.
The nose of this 24-year-old-bourbon continues flawlessly into the palate, with that gorgeous, sweet caramel fudge and nougat being present, with little sweet prickles of spices like cinnamon, nutmeg. A hint of ground, white pepper. And vanilla. There’s oak. There are tannins. There’s dried orange, orange peel. There is just really, truly amazing 24-year-old bourbon.
Finish
This is a perfect bourbon. Breathe out. Slowly. Enjoy the experience. The tannins have made space for oak and then some, slowly building up towards that fire. Ah yes, more spices, more sweetness, more caramel, nougat, sugar, vanilla. Don’t let it stop. Please don’t let it stop?

Heaven Hill 13 Years Old: The Rebirth
At a proof of 129.6, you better rest assured that this Phoenix rises up amidst hot flames during this Rebirth. Whilst the oxygen burns up on your tongue, oaky dryness, orchard fruits, spices and tannins pull your cheeks inwards.
Let the tears run down your face. It’s ok to cry. These are tears of joy. The future is bright for this mythical bird, that will burn in the sky for yet another cycle.
Nose
Go on, stick your nose in deep. Breathe in. This 13-year-old Heaven Hill will send up hints of pear, orange zest, cinnamon and white pepper. And to fire up this Rebirth of the Phoenix, the fruits and spices are accompanied by welcoming oakiness.
Palate
Don’t expect the spices that are present on the nose to settle down on the palate. Take that first sip you’ve been craving. Orchard fruitiness - think of pear, caramel apples and orange zest - makes way for tangible spiciness fast. Cinnamon, nutmeg, pepper, bay leaves. Woa! This is a fiery Rebirth for sure.
Finish
The very first moment you breathe out to experience that long and palpable finish, ripe pear battles white pepper, clove and nutmeg. Just breathe calmly. It gets easier after the coming sips. Is that a shard of smoke coming from your nostrils? Naaa, that’s just a figment of your imagination. Right…?
